Description

This Peach Burrata Summer Salad is the perfect warm-weather dish, featuring juicy peaches, creamy burrata, peppery arugula, fresh basil, and sweet cherry tomatoes, all finished with extra virgin olive oil and balsamic glaze. Ready in just 15 minutes, it’s an easy appetizer, side dish, or light lunch that’s bursting with fresh summer flavor.


Ingredients

  • 3 ripe peaches, sliced thinly
  • 2 balls burrata cheese (about 4 oz each)
  • 1 cup cherry tomatoes, halved (optional)
  • ½ cup fresh basil leaves
  • 2 cups arugula or mixed greens (optional)
  • 2 tablespoons extra virgin olive oil
  • 12 tablespoons balsamic glaze
  • ¼ teaspoon sea salt, or to taste
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Wash the peaches and slice them into thin wedges. Halve the cherry tomatoes if using, and gently tear the burrata into halves or quarters.
  2. Arrange the arugula or mixed greens on a large serving platter.
  3. Place the burrata over the greens.
  4. Arrange the peach slices around and over the burrata, then scatter the cherry tomatoes on top.
  5. Tuck the fresh basil leaves throughout the salad.
  6. Drizzle with olive oil followed by the balsamic glaze.
  7. Season with sea salt and freshly ground black pepper.
  8. Serve immediately and enjoy while the burrata is creamy and the peaches are fresh.

Notes

  • Use ripe but firm peaches for the best texture.
  • Let the burrata sit at room temperature for about 20 minutes before serving for maximum creaminess.
  • Fresh mozzarella can be substituted if burrata isn’t available.
