Instructions

Prepare the Chicken:

  1. Pat the chicken thighs dry with a paper towel. Season them on both sides with salt, black pepper, and paprika.

Sear the Chicken:

  1. Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs, skin-side down (if using skin-on), and sear for 5-7 minutes, until the skin is golden and crispy. Flip and cook the other side for 3-4 minutes. Remove the chicken from the skillet and set aside.

Make the Honey Garlic Sauce:

  1. In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for 30 seconds until fragrant.
  2. Stir in the honey, soy sauce, and rice vinegar. Bring the mixture to a simmer and cook for 2-3 minutes.

Combine and Cook:

  1. Return the chicken thighs to the skillet, spooning the sauce over them. Cover and cook on medium-low heat for 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C).
  2. If you prefer a thicker glaze, stir the cornstarch slurry into the sauce and cook for an additional 1-2 minutes, stirring until the sauce thickens.
