Description

This Watermelon Arugula Salad is sweet, peppery, and refreshing with juicy watermelon, feta, toasted walnuts, mint, and a quick red wine vinaigrette—ready in minutes.

  • 8 oz arugula (1 bag)
  • 2 cups watermelon, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup walnuts, toasted
  • 1 small red onion, thinly sliced
  • 2 sprigs fresh mint, minced

Vinaigrette

 

  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 large pinch salt
  • Freshly ground black pepper, to taste

Instructions

  1. In a large serving bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.
  2. Add the arugula, watermelon, feta, toasted walnuts, red onion, and mint to the bowl.
  3. Gently toss until everything is evenly coated. Serve right away.

Notes

  • For the best flavor, use cold watermelon and fresh mint.
  • If red onion feels too strong, soak slices in cold water for 5–10 minutes, then drain.
