Ingredients

  • 68 Persian cucumbers (or 2 large English cucumbers), thinly sliced
  • 1½ cups mini sweet bell peppers (red, orange, yellow), thinly sliced
  • 12 tablespoons chili oil (adjust to taste)
  • ¼ cup ginger sesame dressing (Bragg’s or similar Asian sesame dressing)
  • 12 teaspoons Everything But The Bagel seasoning (to taste)

Optional:

 

  • 1 cup cottage cheese per serving (for a high-protein option)

Instructions

  1. Thinly slice the Persian cucumbers into small rounds.
  2. Slice the mini sweet bell peppers into thin circles.
  3. Add cucumbers and peppers to a large mixing bowl.
  4. Drizzle with chili oil and ginger sesame dressing.
  5. Sprinkle Everything But The Bagel seasoning over the top.
  6. Toss everything together until evenly coated.
  7. Refrigerate for 30 minutes before serving to allow flavors to develop.
  8. Serve chilled. Optional: Spoon over cottage cheese for a protein-packed snack.
