These Sweet and Spicy Pineapple Shrimp Skewers are a quick and flavorful grilling recipe made with juicy shrimp, sweet pineapple chunks, sweet chili sauce, and sambal. - 1 lb large uncooked shrimp, peeled and deveined
- 1 lb fresh pineapple chunks
- 1/3 cup sweet chili sauce
- 2 teaspoons sambal

Instructions
- In a small bowl, stir together the sweet chili sauce and sambal until well combined.
- Thread the shrimp and pineapple chunks onto skewers, alternating between shrimp and pineapple until all ingredients are used (about 9–10 skewers).
- Brush both sides of each skewer generously with the sauce.
- Preheat the grill to medium-high heat.
- Grill the skewers for 3 minutes.
- Brush with any remaining sauce, flip the skewers, and grill for another 2–3 minutes, or until the shrimp are pink and opaque.
- Transfer to a serving platter and garnish with chopped parsley and lime wedges, if desired.
- Serve immediately.
Notes
- If using wooden skewers, soak them in water for at least 30 minutes before grilling.
- Fresh pineapple caramelizes beautifully, but canned pineapple chunks can be used if well drained.
- Adjust the amount of sambal for a milder or spicier glaze.
- Be careful not to overcook the shrimp—they cook very quickly.
