Description

These Sweet and Spicy Pineapple Shrimp Skewers are a quick and flavorful grilling recipe made with juicy shrimp, sweet pineapple chunks, sweet chili sauce, and sambal. Ready in just 20 minutes, they’re perfect for summer BBQs, weeknight dinners, or an easy appetizer that’s bursting with sweet, smoky, and spicy flavor.


Ingredients

  • 1 lb large uncooked shrimp, peeled and deveined
  • 1 lb fresh pineapple chunks
  • 1/3 cup sweet chili sauce
  • 2 teaspoons sambal

Optional Garnish

 

  • Chopped fresh parsley
  • Lime wedges

Instructions

  1. In a small bowl, stir together the sweet chili sauce and sambal until well combined.
  2. Thread the shrimp and pineapple chunks onto skewers, alternating between shrimp and pineapple until all ingredients are used (about 9–10 skewers).
  3. Brush both sides of each skewer generously with the sauce.
  4. Preheat the grill to medium-high heat.
  5. Grill the skewers for 3 minutes.
  6. Brush with any remaining sauce, flip the skewers, and grill for another 2–3 minutes, or until the shrimp are pink and opaque.
  7. Transfer to a serving platter and garnish with chopped parsley and lime wedges, if desired.
  8. Serve immediately.

Notes

  • If using wooden skewers, soak them in water for at least 30 minutes before grilling.
  • Fresh pineapple caramelizes beautifully, but canned pineapple chunks can be used if well drained.
  • Adjust the amount of sambal for a milder or spicier glaze.
  • Be careful not to overcook the shrimp—they cook very quickly.
  • Great served with coconut rice, grilled vegetables, or a fresh summer salad.
