Description

Street Corn Creamy Cucumber Salad is a fresh, creamy, and flavor-packed side dish made with grilled corn, crisp cucumber, red onion, and a tangy lime yogurt dressing.   • 2 ears corn, grilled and kernels removed
  • 1 large cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped

Dressing

  • 1/2 cup Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste

Instructions

  1. Grill the Corn
    Preheat grill to medium-high heat. Grill corn for 10–12 minutes, turning occasionally, until tender and lightly charred. Remove and let cool.
  2. Cut the Kernels
    Slice the cooled corn kernels off the cob using a sharp knife. Add to a large mixing bowl.
  3. Combine Fresh Ingredients
    Add diced cucumber, chopped red onion, and cilantro to the bowl. Stir to combine.
  4. Make the Dressing
    In a small bowl, whisk together Greek yogurt, mayonnaise, garlic, lime juice, chili powder, salt, and pepper.
  5. Mix & Chill
    Pour dressing over the salad and toss until evenly coated. Refrigerate for at least 30 minutes before serving.
  6. Serve
    Stir before serving. Adjust seasoning if needed. Garnish with extra cilantro and a sprinkle of chili powder.

Notes

  • For extra heat, add diced jalapeño or a pinch of cayenne.
  • If using frozen corn, sauté in a hot skillet until slightly charred.
