Ingredients
Scale
Salad
- 6 cups fresh baby spinach
- 2 cups strawberries, sliced
- 1 cup blueberries
- ¾ cup pecans, toasted
- ½ cup feta cheese, crumbled
Balsamic Glaze Dressing
- 1 cup balsamic vinegar
- ¼ cup honey (or brown sugar)
Instructions
- Make the balsamic glaze:
In a small saucepan over medium heat, combine balsamic vinegar and honey (or brown sugar). Bring to a gentle boil. - Simmer:
Reduce heat and simmer for about 10 minutes, stirring occasionally, until reduced by half and slightly thickened. - Cool:
Remove from heat and let cool completely. The glaze will thicken as it cools. - Assemble the salad:
Add spinach to a large serving bowl. Top with strawberries, blueberries, toasted pecans, and feta cheese. - Drizzle and serve:
Drizzle balsamic glaze over the salad just before serving. Toss lightly if desired.
Notes
- Toast pecans in a dry skillet for 3–5 minutes for extra flavor.
- Let the glaze cool fully before drizzling to prevent wilting the spinach.
- Add grilled chicken for a heartier meal.
- Store dressing separately if making ahead.
