Description

  • 1 cup blueberries
  • ¾ cup pecans, toasted
  • ½ cup feta cheese, crumbled

Balsamic Glaze Dressing

  • 1 cup balsamic vinegar
  • ¼ cup honey (or brown sugar)

Instructions

  1. Make the balsamic glaze:
    In a small saucepan over medium heat, combine balsamic vinegar and honey (or brown sugar). Bring to a gentle boil.
  2. Simmer:
    Reduce heat and simmer for about 10 minutes, stirring occasionally, until reduced by half and slightly thickened.
  3. Cool:
    Remove from heat and let cool completely. The glaze will thicken as it cools.
  4. Assemble the salad:
    Add spinach to a large serving bowl. Top with strawberries, blueberries, toasted pecans, and feta cheese.
  5. Drizzle and serve:
    Drizzle balsamic glaze over the salad just before serving. Toss lightly if desired.
