For the Salmon Patties
- 16 ounces cooked salmon or 1 (14.75-ounce) can salmon
- 2 large eggs, lightly beaten
- ½ cup chopped onion
- ⅔ cup fine almond flour
- ¼ cup chopped fresh parsley
- 2 garlic cloves, chopped
- 2 tablespoons fresh lemon juice
- ⅛ teaspoon sea salt
- ⅛ teaspoon freshly cracked black pepper
- 2–4 tablespoons neutral oil, for frying

Instructions
- In a small bowl, combine the mayonnaise, Greek yogurt, lemon juice, garlic, and parsley. Stir until smooth, cover, and refrigerate.
- Flake the cooked salmon into a medium bowl.
- Add the eggs, onion, almond flour, parsley, garlic, lemon juice, salt, and pepper. Mix until well combined.
- Scoop about 2-ounce portions and shape into evenly sized patties.
- Heat 1 tablespoon of oil in a large skillet over medium heat until shimmering.
- Cook the patties for 5–6 minutes per side until golden brown and cooked through. Work in batches, adding more oil as needed.
- Transfer the cooked patties to a paper towel-lined plate.
- Serve immediately with the chilled creamy lemon garlic sauce, fresh parsley, and lemon wedges.
Notes
- Canned salmon or leftover cooked salmon both work well.
- If the mixture feels too soft, add a little extra almond flour.
- Don’t overcrowd the skillet for even browning.
