Description

These crispy Salmon Patties are made with tender salmon, fresh herbs, and almond flour, then pan-fried until golden brown and served with a creamy lemon garlic sauce.   • ¼ cup mayonnaise
  • ½ cup plain Greek yogurt
  • 1 tablespoon fresh lemon juice

For the Salmon Patties

  • 16 ounces cooked salmon or 1 (14.75-ounce) can salmon
  • 2 large eggs, lightly beaten
  • ½ cup chopped onion
  • ⅔ cup fine almond flour
  • ¼ cup chopped fresh parsley
  • 2 garlic cloves, chopped
  • 2 tablespoons fresh lemon juice
  • ⅛ teaspoon sea salt
  • ⅛ teaspoon freshly cracked black pepper
  • 24 tablespoons neutral oil, for frying

Optional for Serving

  • Fresh chopped parsley
  • Lemon wedges

Instructions

  1. In a small bowl, combine the mayonnaise, Greek yogurt, lemon juice, garlic, and parsley. Stir until smooth, cover, and refrigerate.
  2. Flake the cooked salmon into a medium bowl.
  3. Add the eggs, onion, almond flour, parsley, garlic, lemon juice, salt, and pepper. Mix until well combined.
  4. Scoop about 2-ounce portions and shape into evenly sized patties.
  5. Heat 1 tablespoon of oil in a large skillet over medium heat until shimmering.
  6. Cook the patties for 5–6 minutes per side until golden brown and cooked through. Work in batches, adding more oil as needed.
  7. Transfer the cooked patties to a paper towel-lined plate.
  8. Serve immediately with the chilled creamy lemon garlic sauce, fresh parsley, and lemon wedges.

Notes

  • Canned salmon or leftover cooked salmon both work well.
  • If the mixture feels too soft, add a little extra almond flour.
