- 2–3 peaches, thickly sliced
- 1/4 cup red onion, thinly sliced
- 1/3 cup BBQ sauce
- Fresh cilantro, for garnish
Instructions
- Preheat oven to 375°F. Spray a 9×13 baking dish with cooking spray.
- Place chicken breasts in a large resealable bag. Using a meat tenderizer or rolling pin, pound to about 1/2-inch thickness.
- Add BBQ sauce and sliced red onion to the bag. Seal and massage until evenly coated.
- Pour the chicken mixture into the prepared baking dish.
- Top with thick peach slices.
- Bake for 20–25 minutes, or until the internal temperature reaches 165°F.
- Garnish with fresh cilantro and drizzle with additional BBQ sauce if desired. Serve warm.
