For the Pineapple Turkey Tacos Filling:
- 1 tablespoon avocado oil
- ½ medium yellow onion, chopped
- ½ tablespoon minced garlic
- 1 pound ground turkey (97% lean)
- 1 tablespoon taco seasoning
- ⅔ cup diced pineapple
- ½ cup jarred salsa
- Taco shells of choice
For Serving:
- Sliced red cabbage
- Diced red bell pepper
- Shredded lettuce
- Sliced avocado
- Fresh cilantro
- Fresh lime juice
Instructions
- Heat avocado oil in a large skillet over medium heat.
- Add chopped onion and minced garlic. Cook for 3–4 minutes until softened and fragrant.
- Add ground turkey and taco seasoning. Break up the turkey with a spoon and cook until almost browned.
- Stir in diced pineapple and salsa. Simmer for 3–5 minutes until turkey is fully cooked and slightly saucy.
- Warm taco shells if desired.
- Fill shells with turkey mixture and top with cabbage, bell pepper, lettuce, avocado, cilantro, and a squeeze of lime. Serve immediately.
Notes
- Drain pineapple slightly if it’s very juicy to avoid excess liquid.
- Ground chicken can be substituted for turkey.
