For the Pineapple Turkey Tacos Filling:

  • 1 tablespoon avocado oil
  • ½ medium yellow onion, chopped
  • ½ tablespoon minced garlic
  • 1 pound ground turkey (97% lean)
  • 1 tablespoon taco seasoning
  • ⅔ cup diced pineapple
  • ½ cup jarred salsa
  • Taco shells of choice

For Serving:

  • Sliced red cabbage
  • Diced red bell pepper
  • Shredded lettuce
  • Sliced avocado
  • Fresh cilantro
  • Fresh lime juice

Instructions

  1. Heat avocado oil in a large skillet over medium heat.
  2. Add chopped onion and minced garlic. Cook for 3–4 minutes until softened and fragrant.
  3. Add ground turkey and taco seasoning. Break up the turkey with a spoon and cook until almost browned.
  4. Stir in diced pineapple and salsa. Simmer for 3–5 minutes until turkey is fully cooked and slightly saucy.
  5. Warm taco shells if desired.
  6. Fill shells with turkey mixture and top with cabbage, bell pepper, lettuce, avocado, cilantro, and a squeeze of lime. Serve immediately.

Notes

  • Drain pineapple slightly if it’s very juicy to avoid excess liquid.
  • Ground chicken can be substituted for turkey.
