  • 1 large English cucumber, diced (or 2 Persian cucumbers)
  • ¼ small red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • 1 small jalapeño, thinly sliced (optional)
  • ¼ cup crumbled feta cheese (optional)
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Wash and dice the pineapple and cucumber into bite-sized pieces.
  2. Thinly slice the red onion and jalapeño. Chop the cilantro.
  3. In a small bowl, whisk together the lime juice, honey (or maple syrup), olive oil, salt, black pepper, and red pepper flakes until combined.
  4. Add the pineapple, cucumber, red onion, cilantro, and jalapeño to a large mixing bowl.
  5. Pour the dressing over the salad and gently toss until everything is evenly coated.
  6. Fold in the crumbled feta cheese if using.
  7. Let the salad rest for 10–15 minutes to allow the flavors to meld.
