Description

This Peach Caprese Salad is a fresh and vibrant summer recipe made with juicy ripe peaches, creamy mozzarella, fragrant basil, and a homemade balsamic glaze. Ready in just 20 minutes, it’s the perfect appetizer, side dish, or light lunch for warm-weather meals, picnics, and backyard gatherings.

For the Balsamic Glaze

  • ½ cup balsamic vinegar
  • 1 teaspoon honey

For the Peach Caprese Salad

  • 2 medium ripe peaches, sliced
  • 1 (8-ounce) ball fresh mozzarella, sliced
  • 1 bunch fresh basil leaves
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. In a small saucepan, combine the balsamic vinegar and honey over medium heat. Bring to a gentle boil, then reduce to a simmer. Cook for 10–15 minutes, stirring occasionally, until reduced by about half. Transfer to a bowl and refrigerate until cooled.
  2. While the glaze cools, place the mozzarella in the freezer for 5 minutes to firm it slightly for easier slicing.
  3. Slice the peaches in half, remove the pits, and cut each half into 8 slices. Peel if desired.
  4. Slice the mozzarella into 16 thin slices.
  5. Remove the basil leaves from the stems and set aside.
  6. Arrange alternating slices of peach, mozzarella, and basil on a large serving platter in a circular pattern.
  7. Sprinkle with flaky sea salt and freshly ground black pepper.
  8. Drizzle generously with the cooled balsamic glaze and serve immediately.

  • Use ripe but firm peaches for the best texture.
  • Chill the mozzarella briefly before slicing for cleaner cuts.
  • Homemade balsamic glaze can be made up to one week ahead and refrigerated.
  • Burrata makes a delicious substitute for fresh mozzarella.
