Description
This Peach Berry Summer Salad is a fresh and colorful summer recipe made with juicy peaches, sweet blueberries, crisp cucumbers, creamy feta cheese, crunchy pecans, and tender leafy greens. - ½ pint fresh blueberries
- 1–2 fresh peaches, sliced
- ½ English cucumber, sliced
- ½ cup feta cheese crumbles
- ¼ cup raw pecans, chopped
- 1 head green leaf lettuce, washed and torn
- 1 head Boston leaf lettuce, washed and torn
Lemon Basil Dressing
- 3 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 tablespoon fresh basil, chiffonade
- Salt and pepper, to taste
Instructions
- In a mason jar with a lid, combine the lemon juice, Dijon mustard, honey, olive oil, basil, salt, and pepper. Shake well until fully combined. Alternatively, whisk the ingredients together in a small bowl. Set aside.
- Wash and dry the green leaf lettuce and Boston lettuce. Remove any tough stems and tear into bite-sized pieces.
- Slice the peaches and remove the pits.
- Slice the cucumber into thin rounds or half-moons.
- Roughly chop the pecans.
- Place the prepared lettuce in a large serving bowl.
- Top with peaches, blueberries, cucumber slices, feta crumbles, and chopped pecans.
- Drizzle the dressing over the salad just before serving and gently toss to combine.
- Serve immediately and enjoy.
