Description

This Peach Berry Summer Salad is a fresh and colorful summer recipe made with juicy peaches, sweet blueberries, crisp cucumbers, creamy feta cheese, crunchy pecans, and tender leafy greens. Tossed with a bright homemade lemon basil dressing, it’s the perfect side dish for BBQs, picnics, potlucks, or a light and healthy lunch.

Salad

  • ½ pint fresh blueberries
  • 12 fresh peaches, sliced
  • ½ English cucumber, sliced
  • ½ cup feta cheese crumbles
  • ¼ cup raw pecans, chopped
  • 1 head green leaf lettuce, washed and torn
  • 1 head Boston leaf lettuce, washed and torn

Lemon Basil Dressing

  • 3 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon fresh basil, chiffonade
  • Salt and pepper, to taste

Instructions

  1. In a mason jar with a lid, combine the lemon juice, Dijon mustard, honey, olive oil, basil, salt, and pepper. Shake well until fully combined. Alternatively, whisk the ingredients together in a small bowl. Set aside.
  2. Wash and dry the green leaf lettuce and Boston lettuce. Remove any tough stems and tear into bite-sized pieces.
  3. Slice the peaches and remove the pits.
  4. Slice the cucumber into thin rounds or half-moons.
  5. Roughly chop the pecans.
  6. Place the prepared lettuce in a large serving bowl.
  7. Top with peaches, blueberries, cucumber slices, feta crumbles, and chopped pecans.
  8. Drizzle the dressing over the salad just before serving and gently toss to combine.
  9. Serve immediately and enjoy.

  • Use ripe but firm peaches for the best texture.
