Description

This Melty Blackberry Jalapeno Stuffed Chicken is the perfect balance of sweet, spicy, and cheesy. Juicy chicken breasts are stuffed with fresh blackberries, sliced jalapeños, and melty mozzarella or provolone, then seared until golden and baked to perfection. It’s an easy 30-minute dinner that’s impressive enough for guests yet simple enough for busy weeknights.

  • 4 boneless, skinless chicken breasts
  • 2 teaspoons oregano or Italian seasoning
  • 1 teaspoon garlic powder
  • Sea salt and black pepper, to taste
  • 1 cup fresh blackberries, lightly smashed
  • 4 small jalapeño peppers, sliced (most seeds removed)
  • 4 thick slices mozzarella or provolone cheese
  • 2 tablespoons avocado oil, olive oil, butter, or coconut oil
  • ½ cup dry white wine or chicken bone broth
  • Fresh parsley or basil, chopped, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season the chicken breasts with oregano, garlic powder, salt, and pepper.
  3. Cut a deep pocket into the side of each chicken breast without slicing all the way through.
  4. Stuff each chicken breast with one slice of cheese, jalapeño slices, and spoonfuls of lightly smashed blackberries.
  5. Secure with toothpicks if needed.
  6. Heat oil in a large oven-safe skillet over medium heat.
  7. Sear the chicken for about 4 minutes per side until golden brown.
  8. Pour the white wine or chicken broth into the skillet to deglaze the pan.
  9. Transfer the skillet to the oven and bake for 12–15 minutes, or until the chicken reaches 165°F internally.
  10. Remove toothpicks, garnish with chopped parsley or basil, and serve immediately.

  • Remove all jalapeño seeds for a milder flavor.
  • Use a meat thermometer to avoid overcooking the chicken.
