Description

Instructions

  1. Slice tomatoes into ⅓-inch thick rounds (halve cherry tomatoes if using).
  2. Arrange sliced tomatoes on a large serving plate in a single layer.
  3. In a bowl, combine olive oil, vinegar, lemon juice (if using), diced red onion, minced garlic, chopped basil, parsley, salt, and pepper.
  4. Whisk thoroughly until well combined.
  5. Pour the marinade evenly over the tomatoes.
  6. Cover and refrigerate for at least 2 hours, flipping tomatoes occasionally so they absorb the marinade evenly.
