- 1 pound ground chicken
- ¼ cup grated Parmesan cheese
- ¼ cup Italian seasoned bread crumbs
- 2 teaspoons Italian seasoning
- ¼ cup chopped flat-leaf parsley
- 1 clove garlic, minced
- 2 green onions, thinly sliced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil
- 6 tablespoons marinara sauce, plus extra for serving
- 4 slices mozzarella cheese
- 4 hamburger buns
- 4 tablespoons pesto
- ½ cup baby spinach or arugula
Instructions
- In a medium bowl, combine the Parmesan cheese, breadcrumbs, Italian seasoning, parsley, garlic, green onions, salt, and black pepper.
- Add the ground chicken and gently mix until evenly combined. Do not overmix.
- Divide the mixture into 4 equal portions and shape into burger patties.
- Refrigerate the patties for 30 minutes to help them hold their shape.
- Heat the olive oil in a large skillet over medium heat.
- Cook the patties for 4–6 minutes per side, or until golden brown and the internal temperature reaches 165°F.
- Spoon about 1½ tablespoons of marinara sauce over each patty and top with a slice of mozzarella cheese.
- Broil on HIGH for 1–2 minutes, until the cheese is melted and bubbly.
- Spread pesto on the top buns. Add spinach or arugula to the bottom buns, place the burgers on top, add extra marinara if desired, then finish with the top buns.
- Serve immediately while warm.
