This Hot Honey Tortellini Pasta Salad is the perfect blend of sweet, savory, and spicy flavors. Tender cheese tortellini is tossed with juicy peaches, crispy prosciutto, mozzarella pearls, sweet corn, cherry tomatoes, and fresh basil, then coated in a flavorful hot honey vinaigrette. For the Salad
- 32 oz cheese tortellini, cooked and cooled
- 4 oz prosciutto
- 8 oz pearl mozzarella balls
- 15 oz can corn kernels, drained
- 3 small peaches, diced
- 2 cups cherry tomatoes, halved
- ½ cup fresh basil, chopped
For the Hot Honey Dressing
- ½ cup extra virgin olive oil
- ⅓ cup hot honey
- 1 tbsp Dijon mustard
- 3 tbsp red wine vinegar
- 2 garlic cloves, minced
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Arrange prosciutto in a single layer on the baking sheet and bake for 10–15 minutes, or until crispy. Let cool, then chop into small pieces.
- Cook tortellini according to package directions. Drain and allow to cool slightly.
- In a large mixing bowl, combine tortellini, mozzarella balls, corn, peaches, cherry tomatoes, and basil.
- Add the chopped crispy prosciutto to the bowl.
- In a measuring cup or small bowl, whisk together olive oil, hot honey, Dijon mustard, red wine vinegar, garlic, salt, and pepper until smooth.
- Pour dressing over the pasta salad and toss until evenly coated.
- Serve immediately at room temperature or chill before serving.
Notes
- For the best flavor, chill the salad for 30 minutes before serving.
- Use ripe but firm peaches to prevent them from becoming mushy.
- Nectarines can be substituted for peaches.
- If making ahead, reserve a small amount of dressing and toss again before serving.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
