- 1/4 cup honey
- 1/4 cup chipotle chilies in adobo sauce
- 2 tablespoons apple cider vinegar (or lime juice)
- 1 tablespoon soy sauce
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- Fresh cilantro or parsley, chopped (optional garnish)
- Green onions, sliced (optional garnish)
Instructions
- In a food processor or blender, combine the honey, chipotle chilies and adobo sauce, apple cider vinegar, soy sauce, garlic, and cumin. Blend until smooth.
- Reserve half of the sauce for serving.
- Place the chicken pieces in a large bowl or zip-top bag and pour the remaining sauce over the chicken. Toss to coat evenly.
- Marinate for at least 20 minutes or up to overnight in the refrigerator.
- If using wooden skewers, soak them in water for 30 minutes before grilling.
- Thread the chicken pieces onto skewers.
- Preheat the grill to medium-high heat (about 400°F).
- Grill the skewers for 2–5 minutes per side, turning occasionally, until the chicken is cooked through and lightly charred.
- Remove from the grill and let rest for 2–3 minutes.
- Garnish with chopped cilantro and green onions if desired.
- Serve with the reserved honey chipotle sauce for dipping.
Notes
- Chicken thighs will produce juicier skewers than chicken breasts.
- For extra spice, add another chipotle pepper to the marinade.
- Always reserve the dipping sauce before marinating raw chicken.
- Use a meat thermometer to ensure the chicken reaches 165°F internally.
