- 2 peaches, diced into ½-inch pieces
- 1 cup cherries, halved and pitted
- 2 garlic cloves, minced
- 1 large handful fresh cilantro, finely chopped
- 1 jalapeño pepper, seeded and finely chopped
- ½ small red onion, finely diced
- Juice of 1½ limes
- Zest of 1 lime
- Salt, to taste (sea salt preferred)
Instructions
- Prep the ingredients:
Mince the garlic. Dice the peaches into ½-inch pieces and place in a large bowl. Halve and pit the cherries and add to the bowl. Finely chop the cilantro. Seed and finely chop the jalapeño. Finely dice the red onion. Juice the limes and zest one. - Combine:
Add garlic, cilantro, jalapeño, and red onion to the bowl with peaches and cherries. - Season:
Pour in lime juice and sprinkle in lime zest. Add salt to taste, starting with a small pinch. - Mix gently:
Fold everything together carefully to avoid crushing the fruit. - Chill:
Refrigerate for at least 15 minutes to allow flavors to meld. Stir gently before serving and adjust seasoning if needed.
Notes
- For less heat, remove all jalapeño seeds and ribs.
- For more spice, leave a few seeds in.
- Best enjoyed within 24 hours for optimal freshness and texture.
- If using frozen cherries, thaw and drain well before mixing.
- Serve with tortilla chips, grilled chicken, fish, tacos, or over rice bowls.
