- ⅓ cup pizza sauce
- 4 ounces shredded low-moisture whole milk mozzarella
- 2 ounces prosciutto, torn into bite-sized pieces
- ¼ cup pickled jalapeños
Instructions
- Place a pizza stone or steel in the center of the oven and preheat to 500°F (260°C) for at least 45 minutes. Flour a pizza peel generously.
- Cook the bacon in a cast-iron skillet over medium heat until crispy, about 15 minutes. Transfer to paper towels and reserve 1 tablespoon of bacon grease.
- Add butter, honey, and chile flakes to the skillet. Stir until melted, then add the pineapple. Cook 4–5 minutes per side until caramelized. Remove and chop along with the bacon.
- Stretch the pizza dough into a 12-inch circle on a floured surface and transfer it to the prepared pizza peel.
- Spread the pizza sauce evenly over the dough, leaving a ½-inch border.
- Sprinkle with mozzarella, then top with the caramelized pineapple, chopped bacon, and torn prosciutto.
- Slide the pizza onto the hot stone and bake for 5 minutes.
- Turn on the broiler and broil for an additional 2–4 minutes until the cheese is bubbly and the crust is golden with lightly charred spots.
- Remove from the oven, top with pickled jalapeños, let cool for 2–3 minutes, slice, and serve.
