  • 3 thick slices fresh pineapple, cored and cut into half-moons

  • ⅓ cup pizza sauce
  • 4 ounces shredded low-moisture whole milk mozzarella
  • 2 ounces prosciutto, torn into bite-sized pieces
  • ¼ cup pickled jalapeños

Instructions

  1. Place a pizza stone or steel in the center of the oven and preheat to 500°F (260°C) for at least 45 minutes. Flour a pizza peel generously.
  2. Cook the bacon in a cast-iron skillet over medium heat until crispy, about 15 minutes. Transfer to paper towels and reserve 1 tablespoon of bacon grease.
  3. Add butter, honey, and chile flakes to the skillet. Stir until melted, then add the pineapple. Cook 4–5 minutes per side until caramelized. Remove and chop along with the bacon.
  4. Stretch the pizza dough into a 12-inch circle on a floured surface and transfer it to the prepared pizza peel.
  5. Spread the pizza sauce evenly over the dough, leaving a ½-inch border.
  6. Sprinkle with mozzarella, then top with the caramelized pineapple, chopped bacon, and torn prosciutto.
  7. Slide the pizza onto the hot stone and bake for 5 minutes.
  8. Turn on the broiler and broil for an additional 2–4 minutes until the cheese is bubbly and the crust is golden with lightly charred spots.
  9. Remove from the oven, top with pickled jalapeños, let cool for 2–3 minutes, slice, and serve.
