This Grilled Zucchini Salad is a fresh, vibrant side dish made with smoky grilled zucchini, sweet charred corn, blistered cherry tomatoes, peppery arugula, and creamy goat cheese. Tossed in a simple lemon-garlic dressing, it’s the perfect summer salad for BBQs, potlucks, or easy weeknight dinners.

- 3 medium zucchini, sliced into ½-inch thick crescents
- 1 cup cherry tomatoes
- 1 cup corn kernels (fresh or frozen, thawed)
- 2 cups arugula
- 4 tablespoons olive oil, divided
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons fresh lemon juice
- 1 clove garlic, minced
- ½ teaspoon dried oregano
- ⅓ cup goat cheese, crumbled
Instructions
- Preheat the grill: Heat an outdoor grill to medium-high (about 425°F). Brush grill grates lightly with oil.
- Grill the zucchini: Drizzle zucchini slices with olive oil and season with salt and pepper. Grill for 2–3 minutes per side, until tender and grill marks appear. Remove and set aside.
- Grill the tomatoes and corn: In a grill pan, combine tomatoes and corn. Drizzle with 1 tablespoon olive oil and season with salt and pepper. Grill, stirring frequently, for 2–3 minutes until lightly charred.
- Make the dressing: In a large salad bowl, whisk together remaining olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Assemble the salad: Add grilled zucchini, tomatoes, corn, and arugula to the bowl. Toss gently to coat.
- Finish and serve: Top with crumbled goat cheese and serve immediately.
Notes
- Substitute yellow squash or eggplant for zucchini if desired.
- Feta or blue cheese can replace goat cheese.
- For extra protein, add grilled chicken, shrimp, or chickpeas.
- Store leftovers in an airtight container for up to 3 days (best if greens are stored separately).
