Instructions
- Chill the watermelon before assembling the salad for the best flavor and texture.
- Add arugula to a large serving bowl.
- Top with cubed watermelon and thinly sliced red onion.
- Sprinkle crumbled feta and fresh mint over the top.
- In a small bowl, whisk together balsamic vinegar, Dijon mustard, honey, and black pepper until smooth.
- Drizzle dressing over the salad just before serving.
- Toss gently and serve immediately.
