Ingredients

  • 1 lb frozen cooked chicken meatballs

  • 1 cup white cooking wine

  • 2 cups chicken broth

  • 1 cup heavy cream

  • 1/2 cup sun-dried tomatoes, chopped

  • 2 cups spinach

  • 1/2 cup Parmesan cheese, grated

  • Salt and pepper to taste


Instructions

  1. In your crockpot, add the chicken broth and white cooking wine. Stir to combine.

  2. Add the frozen chicken meatballs and mix to coat them in the broth mixture.

  3. Cover and cook on low for 4-6 hours, or until the meatballs are heated through. Stir halfway through if possible.

  4. About 30 minutes before the end of cooking, add the chopped sun-dried tomatoes to the crockpot.

  5. Just before serving, stir in the heavy cream, grated Parmesan cheese, and spinach. Let the spinach wilt and the cheese melt, then serve!

  6. Season with salt and pepper to taste.

Notes

Frozen Meatballs: No need to thaw the meatballs before adding them to the crockpot. They’ll cook perfectly right from frozen.
Substitute Ingredients: You can use half-and-half instead of heavy cream for a lighter version, but the sauce won’t be as rich.
