Description

This hearty Crock Pot Hamburger Soup is packed with ground beef, tender potatoes, carrots, celery, and rich tomato broth. It’s a cozy, comforting slow cooker meal perfect for busy weeknights and chilly days.


Ingredients

  • 1 tbsp olive oil

  • 1 onion, diced

  • 2 lb lean ground beef

  • 4 carrots, chopped

  • 3 celery stalks, chopped

  • 2 Yukon potatoes, cut into bite-size pieces (about 4 cups)

  • 3 cans fire-roasted tomatoes (15 oz each)

  • 34 garlic cloves, minced

  • 1 cup tomato sauce

  • 1 tsp Worcestershire sauce

  • 1 tbsp Italian seasoning

  • ½ tsp onion powder

  • ½ tsp sea salt

  • ½ tsp pepper

  • ¼ tsp red pepper flakes (optional)

  • 4 cups beef broth (more for a thinner broth)

  • 2 bay leaves

  • 6 oz tomato paste

  • 1 cup frozen corn

  • ½1 cup frozen peas


Instructions

  1. Add the diced potatoes, carrots, celery, tomatoes, tomato sauce, garlic, Italian seasoning, onion powder, salt, pepper, red pepper flakes (if using), and bay leaves to the slow cooker. Stir to combine.

  2. In a skillet over medium-high heat, warm the olive oil and sauté the diced onion. Add the ground beef and cook until browned and no longer pink. Drain excess grease, then transfer the beef and onions to the slow cooker.

  3. Pour in the beef broth and Worcestershire sauce. Stir everything together.

  4. Cover and cook:

    • Low: 6–8 hours

    • High: 3–5 hours
      Cook until potatoes and carrots are tender.

  5. About 15–20 minutes before serving, stir in the tomato paste, peas, and corn. Adjust broth thickness by adding more broth (thinner) or more tomato paste (thicker).

  6. Season to taste and serve warm—optional topping: shredded cheese.

Notes

  • Soup too thick? Add extra broth at the end.

  • Soup too thin? Add more tomato paste or lightly mash a few potatoes.

  • This soup freezes well.

  • Fire-roasted tomatoes add richness, but regular diced tomatoes also work.
