Description

Creamy Tuscan Salmon is a rich, restaurant-style dinner made in one skillet with garlic cream sauce, cherry tomatoes, spinach, and parmesan. Ready in just 30 minutes, this cozy and flavorful salmon recipe is perfect for busy weeknights or an impressive date-night meal at home.

  • 2 tablespoons olive oil
  • 4 (4-ounce) salmon fillets
  • 1 teaspoon kosher salt (for salmon, plus more)
  • 1/2 teaspoon black pepper (plus more)
  • 2 tablespoons butter
  • 6 cloves garlic, smashed and minced
  • 18 ounces cherry tomatoes (half chopped, half whole)
  • 1 cup heavy cream
  • 1 1/2 teaspoons kosher salt (for sauce)
  • 1 teaspoon dried basil
  • 1/4 teaspoon cayenne pepper
  • Black pepper, to taste
  • 1/2 cup Parmesan cheese, shredded
  • 34 ounces fresh spinach, chopped
  • 1/2 bunch fresh basil, roughly chopped

Instructions

  1. Heat a 12-inch high-sided skillet over medium-high heat for 2 minutes.
  2. Pat salmon dry and season with kosher salt and black pepper.
  3. Add olive oil to the hot pan. Place salmon skin-side down if applicable. Sear 1–3 minutes until golden.
  4. Flip and cook 30 seconds to 1 minute. Remove from pan and keep warm.
  5. Reduce heat to medium. Add butter to the same pan.
  6. Stir in garlic and cook 1 minute until fragrant.
  7. Add cherry tomatoes and cook until some begin to soften and split.
  8. Pour in heavy cream. Add salt, dried basil, cayenne, and black pepper. Simmer 2–4 minutes.
  9. Stir in Parmesan cheese and chopped spinach. Cook until sauce thickens and spinach wilts.
  10. Add fresh basil. Return salmon to the pan and heat through.
  11. Serve immediately with pasta, rice, roasted potatoes, or a fresh salad.

Notes

  • Do not overcrowd the pan when searing salmon.
  • For thicker sauce, simmer slightly longer.
  • For thinner sauce, add a splash of cream or broth.
  • Store leftovers in an airtight container up to 3 days.
