For the Crust:
- 4 tbsp unsalted butter, melted
- 24 graham cracker squares
- ¼ cup granulated sugar
For the Lemon Filling:
- 2 large egg yolks
- 1 (12 oz) can sweetened condensed milk
- ½ cup fresh lemon juice
Instructions
- Preheat oven to 350°F.
- Butter and line an 8-inch square baking pan with parchment paper, leaving overhang on two sides.
- Pulse graham crackers in a food processor until finely crumbled.
- Add sugar and melted butter. Pulse until combined.
- Press mixture firmly into bottom and 1 inch up sides of pan.
- Bake crust for 10–12 minutes until lightly golden. Cool completely.
- In a bowl, whisk egg yolks and sweetened condensed milk until smooth.
- Add lemon juice and whisk until fully combined and slightly thickened.
- Pour filling into cooled crust.
- Bake 15–20 minutes until center is set.
- Cool completely, then refrigerate for firmer texture.
- Lift from pan and cut into 9 large or 16 small squares.
Notes
- Fresh lemon juice gives the best bright flavor.
- Chill before slicing for clean, neat squares.
- Store in the refrigerator up to 5 days.
