Description

This creamy Cowboy Corn Dip is the ultimate crowd-pleasing appetizer made with sweet corn, black beans, crispy bacon, three kinds of cheese, and a hint of jalapeño heat. Ingredients

  • 2 cans (15.25 ounces each) whole kernel corn, drained
  • 1 can (15 ounces) black beans, rinsed and drained
  • ½ cup mayonnaise
  • 4 ounces cream cheese, softened
  • 1 cup mild cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • ½ cup parmesan cheese, grated
  • 1 large jalapeño, seeded and finely diced
  • 8 slices thick-cut bacon, cooked and crumbled
  • 1 medium red onion, finely diced
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Green onion, chopped for garnish

Instructions

  1. In a large mixing bowl, combine the drained corn, black beans, mayonnaise, softened cream cheese, cheddar cheese, mozzarella cheese, parmesan cheese, jalapeño, bacon, red onion, salt, and pepper.
  2. Stir until all ingredients are evenly combined and creamy.
  3. Transfer to a serving bowl.
  4. Garnish with chopped green onions.
  5. Serve immediately with tortilla chips, crackers, or fresh vegetables.

Notes

  • For the best flavor, refrigerate the dip for 30 minutes before serving.
