- 1/2 cup strawberries, hulled and halved
- 3/4 cup almond milk

- 3 tablespoons chia seeds
For the Topping:
- 1/2 cup strawberries, diced

- Blend the Base:
Add cottage cheese, Greek yogurt, strawberries, almond milk, vanilla, and sugar to a blender. Blend on high for 60–90 seconds until completely smooth and creamy. - Add Chia Seeds:
Pour the blended mixture into a jar or container. Stir in chia seeds vigorously for about 1 minute to prevent clumping. - Chill:
Cover and refrigerate for at least 24 hours to allow the chia seeds to fully thicken. - Serve:
Stir before serving. If too thick, add a splash of almond milk. Top with diced strawberries just before eating.
Notes
- Stir thoroughly to prevent chia seeds from settling at the bottom.
- If pudding is too thick after chilling, thin with almond milk 1 tablespoon at a time.
- Best enjoyed within 3 days.
- You can substitute almond milk with oat milk, dairy milk, or coconut milk.
