Description

  • 1 (15 oz) can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 small red onion, finely diced
  • 1/3 cup fresh cilantro, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Mexican Vinaigrette:

  • 1/2 teaspoon Mexican oregano
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup red wine vinegar
  • 1/2 cup avocado oil or grapeseed oil
  • 1 tablespoon water
  • 1/2 teaspoon granulated garlic
  • 1 teaspoon sugar

Instructions

  1. In a large mixing bowl, combine the defrosted corn, rinsed black beans, diced bell peppers, red onion, cilantro, salt, and black pepper. Stir to evenly mix.
  2. In a mason jar or small bowl, add all vinaigrette ingredients. Shake or whisk vigorously until fully combined.
  3. Pour the vinaigrette over the salad mixture. Toss thoroughly to coat all ingredients.
  4. Taste and adjust seasoning if needed.
  5. Allow the salad to marinate for at least 15–30 minutes before serving for best flavor.
  6. Serve chilled or at room temperature.
