  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 ½ cups roasted red peppers (jarred or freshly roasted)
  • ¾ cup vegetable broth (or chicken broth)
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper

For the Cod

  • 4 cod fillets (about 6 oz each)

For Garnish

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat the oil:
    In a large skillet over medium heat, warm olive oil until shimmering.
  2. Sauté onion:
    Add diced onion and cook for 4–5 minutes until soft and translucent.
  3. Add garlic:
    Stir in minced garlic and cook for 30–60 seconds until fragrant.
  4. Build the sauce:
    Add roasted red peppers, broth, smoked paprika, oregano, salt, and pepper. Simmer for 8–10 minutes.
  5. Blend:
    Use an immersion blender (or carefully transfer to a blender) and blend until smooth and creamy.
  6. Cook the cod:
    Nestle cod fillets into the sauce. Spoon sauce over the top. Cover and cook on medium-low for 8–10 minutes, or until the fish flakes easily with a fork.
  7. Finish & serve:
    Garnish with fresh parsley and serve immediately.

Notes

  • Pat the cod dry before cooking for the best texture.
  • Tilapia or haddock can be substituted for cod.
  • For extra richness, stir in 1–2 tablespoons of heavy cream at the end.
