For the Peach Salsa

  • 3 medium yellow peaches, pitted and diced
  • 1 sweet red bell pepper, diced
  • ¼ cup red onion, diced
  • 3 green onions, finely chopped
  • ½ bunch fresh cilantro, chopped
  • 2 tablespoons freshly squeezed lime juice
  • ¼ teaspoon chili powder
  • ¼ teaspoon salt

For the Cilantro Lime Honey Chicken

  • 1 pound boneless, skinless chicken breasts, sliced
  • ½ teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ¼ teaspoon salt
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons honey
  • 2 tablespoons salted butter

For Serving

 

  • 2 cups cooked jasmine rice
  • Fresh cilantro, chopped
  • Lime wedges

Instructions

  1. Wash the peaches well, leaving the skin on, then dice them.
  2. In a large bowl, combine the peaches, bell pepper, red onion, green onions, cilantro, lime juice, chili powder, and salt. Toss gently and adjust seasoning to taste.
  3. Season the sliced chicken with smoked paprika, chili powder, salt, and black pepper.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Add the chicken and cook undisturbed for about 4 minutes.
  6. Flip the chicken and cook for another 2 minutes.
  7. Reduce the heat to low and stir in the lime juice and honey. Cook for 2–3 more minutes until the chicken is fully cooked.
  8. Remove the skillet from the heat and stir in the butter until melted. Toss with the chopped cilantro.
  9. Divide the cooked jasmine rice among serving bowls.
  10. Top with the cilantro lime chicken, fresh peach salsa, extra cilantro, and lime wedges. Serve immediately.
