For the Peach Salsa

- ¼ teaspoon chili powder
- ¼ teaspoon salt
For the Cilantro Lime Honey Chicken
- 1 pound boneless, skinless chicken breasts, sliced
- ½ teaspoon smoked paprika
- 1 teaspoon chili powder
- ¼ teaspoon salt
- Freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons freshly squeezed lime juice
- 2 tablespoons honey
- 2 tablespoons salted butter
For Serving
- 2 cups cooked jasmine rice
- Fresh cilantro, chopped
- Lime wedges
Instructions
- Wash the peaches well, leaving the skin on, then dice them.
- In a large bowl, combine the peaches, bell pepper, red onion, green onions, cilantro, lime juice, chili powder, and salt. Toss gently and adjust seasoning to taste.
- Season the sliced chicken with smoked paprika, chili powder, salt, and black pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken and cook undisturbed for about 4 minutes.
- Flip the chicken and cook for another 2 minutes.
- Reduce the heat to low and stir in the lime juice and honey. Cook for 2–3 more minutes until the chicken is fully cooked.
- Remove the skillet from the heat and stir in the butter until melted. Toss with the chopped cilantro.
- Divide the cooked jasmine rice among serving bowls.
- Top with the cilantro lime chicken, fresh peach salsa, extra cilantro, and lime wedges. Serve immediately.
