Description

For the Chicken

  • 1.4 pounds boneless, skinless chicken thighs
  • ½ teaspoon chili powder (or more, to taste)
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil

For the Peaches

  • 2 medium yellow peaches, washed, cored, and sliced
  • 3 tablespoons honey (or more, to taste)
  • Juice of ½ lemon
  • 2 tablespoons butter
  • Fresh thyme, for garnish (optional)

Instructions

  1. Season the chicken thighs with chili powder, Italian seasoning, salt, and black pepper.
  2. Heat a 12-inch cast-iron skillet over medium heat for about 2 minutes.
  3. Add the olive oil, then place the chicken thighs in the skillet. Cook undisturbed for 5 minutes until nicely browned.
  4. Flip the chicken, reduce the heat to medium-low, and cook for another 5–7 minutes, or until the internal temperature reaches 165°F.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the sliced peaches and cook for about 5 minutes until slightly softened.
  7. Stir in the honey, fresh lemon juice, and butter until the butter melts and forms a glossy sauce.
  8. Return the chicken to the skillet, nestling it among the peaches. Warm everything together for 1–2 minutes.
  9. Garnish with fresh thyme and serve immediately.

Notes

  • Use ripe but slightly firm peaches so they hold their shape while cooking.
  • Chicken breasts can be substituted for chicken thighs; adjust the cooking time as needed.
  • Fresh lemon juice provides the best flavor.
  • Add extra honey if your peaches aren’t very sweet.
  • Serve over rice, mashed potatoes, pasta, quinoa, or with crusty bread to soak up the delicious sauce.
