For the Garlic Herb Chicken

  • 4 boneless, skinless chicken breasts

  • 3 cloves garlic, minced

  • 1 tbsp fresh thyme, chopped

  • 1 tbsp fresh rosemary, chopped

  • 3 tbsp olive oil

  • 2 tbsp fresh lemon juice

  • Salt and black pepper, to taste

For the Mashed Potatoes

  • 2 lbs russet potatoes, peeled and cubed

  • 4 tbsp butter

  • ½ cup milk (more as needed)

  • Salt and black pepper, to taste

For the Glazed Carrots

  • 1 lb carrots, sliced into sticks or rounds

  • 2 tbsp butter

  • 2 tbsp brown sugar

  • 1 tbsp honey

  • Salt and black pepper, to taste


Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a small bowl, mix garlic, thyme, rosemary, olive oil, and lemon juice. Season chicken with salt and pepper, then rub the mixture all over.

  3. Place chicken in a lightly greased baking dish and bake for 25–30 minutes, until internal temperature reaches 165°F. Let rest 5 minutes.

  4. Meanwhile, boil potatoes in salted water for 15–20 minutes until fork-tender. Drain well.

  5. Mash potatoes with butter and milk until smooth. Season to taste.

  6. In a saucepan, melt butter over medium heat. Stir in brown sugar, honey, salt, and pepper.

  7. Add carrots and cook 10–15 minutes, stirring occasionally, until tender and glazed.

  8. Serve chicken over mashed potatoes with glazed carrots on the side.

Notes

Let the chicken rest before slicing to keep it juicy.

Add extra milk or butter if you like ultra-creamy mashed potatoes.

Fresh herbs give the best flavor, but dried herbs can be used in a pinch.
