Ingredients

  • 1 medium red onion, chopped

  • 1 red bell pepper, chopped

  • 1 teaspoon ground cumin

  • 1/2 teaspoon chili powder

  • 1 teaspoon kosher salt

  • 1/2 teaspoon ground black pepper

  • 2 cloves garlic, minced

  • 1 (10-ounce) can diced tomatoes with green chilies

  • 1 (15-ounce) can black beans, drained and rinsed

  • 1 cup frozen corn

  • 2 cups shredded cooked chicken

  • 1 cup salsa

  • 2 cups crushed tortilla chips

  • 2 cups shredded Mexican cheese blend

  • Chopped cilantro and sour cream, for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C).

  2. Heat olive oil in a large skillet over medium heat. Add onion and red bell pepper; sauté for 5 minutes until softened.

  3. Stir in cumin, chili powder, salt, pepper, and garlic. Cook for 1 minute until fragrant.

  4. Add diced tomatoes with chilies, black beans, corn, chicken, and salsa. Stir to combine; cook for 3–4 minutes until heated through.

  5. In a 9×13-inch baking dish, spread half the crushed tortilla chips. Spoon chicken mixture evenly over chips.

  6. Top with remaining chips and sprinkle cheese over the top.

  7. Bake for 20–25 minutes, or until cheese is melted and bubbly.

  8. Garnish with cilantro and sour cream before serving.

Notes

Swap Mexican cheese blend for cheddar or pepper jack if you like extra spice.
Use rotisserie chicken for a faster prep.
To make ahead, assemble without topping chips and cheese; refrigerate and add them before baking.
