Description

These Chicken Strawberry Salad Bowls are fresh, colorful, and packed with protein. Made with juicy grilled chicken, sweet strawberries, crispy bacon, creamy avocado, feta cheese, and crisp romaine, they’re perfect for healthy lunches, light dinners, or easy meal prep.


Ingredients

  • 4 small boneless, skinless chicken breasts
  • 1 tablespoon avocado oil (or olive oil)
  • 4 slices nitrate-free bacon, cooked and crumbled
  • 1 large head romaine lettuce, finely chopped
  • 2 cups fresh strawberries, chopped
  • 1 small red onion, thinly sliced
  • ½ cup crumbled feta, goat cheese, Parmesan, or Cotija cheese
  • 1 large avocado, sliced
  • Juice of ½ lemon
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

For Serving

  • Extra virgin olive oil
  • High-quality balsamic vinegar
  • Fresh chopped basil or cilantro (optional)

Instructions

  1. Season both sides of the chicken breasts with sea salt and black pepper.
  2. If desired, pound the thicker parts of the chicken breasts for even cooking.
  3. Heat avocado oil in a large skillet over medium heat.
  4. Cook the chicken for about 4 minutes per side, or until golden brown and fully cooked (165°F internal temperature).
  5. Transfer the chicken to a cutting board and let it rest for 5 minutes before slicing into bite-sized pieces.
  6. Divide the chopped romaine evenly among four serving bowls or meal prep containers.
  7. Top each bowl with sliced chicken, strawberries, bacon, red onion, crumbled cheese, and avocado tossed with lemon juice.
  8. Just before serving, drizzle lightly with olive oil and balsamic vinegar.
  9. Season with additional salt and pepper if desired, toss gently, and enjoy.
