Ingredients
For the Fritters:
- 1 lb (450g) chicken breast, finely chopped or ground
- 1 large egg
- 1/4 cup (60ml) mayonnaise
- 1/4 cup (30g) all-purpose flour (or almond flour for gluten-free)
- 1/2 cup (50g) shredded mozzarella cheese
- 2 garlic cloves, minced
- 2 tablespoons fresh parsley or dill, finely chopped
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- Salt and black pepper, to taste

- 3 tablespoons vegetable oil (or olive oil)

Instructions
Prepare the Chicken Mixture:

Cook for 3-4 minutes per side, or until golden brown and cooked through. The internal temperature of the fritters should reach 165°F (74°C).Drain and Serve:
Remove the cooked fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.Garnish and Enjoy:
Serve the fritters warm, garnished with fresh parsley and a squeeze of lemon, if desired. Pair with your favorite dipping sauce, such as sour cream, garlic aioli, or spicy mayo.
