For the Chicken Crust:
- 1 lb ground chicken
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 tsp dried Italian herbs (oregano, basil)

- Salt and pepper, to taste
- 1 tbsp olive oil (for greasing if needed)
For the Caesar Salad Topping:
- 2 cups romaine lettuce, chopped
- 1/4 cup Caesar dressing (creamy)
- 1/4 cup grated Parmesan cheese
- 1/2 cup cooked chicken pieces, seasoned and crisped or chicken bacon bits (optional)
- Freshly ground black pepper, to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix the crust. In a large bowl, combine ground chicken, mozzarella, Parmesan, egg, Italian herbs, garlic powder, salt, and pepper. Mix until fully combined.
- Shape the crust. Press the mixture onto the prepared baking sheet into a 10–12-inch round crust, keeping thickness even.
- Bake. Bake for 20–25 minutes, or until golden brown and fully cooked through. If excess moisture appears, gently blot with a paper towel near the end of baking.
- Prepare the salad. In a separate bowl, toss chopped romaine with Caesar dressing and grated Parmesan.
- Cool slightly. Remove crust from oven and let rest for 5–10 minutes to firm up.
- Assemble. Top crust evenly with Caesar salad mixture.
- Finish. Add optional crispy chicken pieces or chicken bacon bits. Sprinkle with black pepper and additional Parmesan if desired.
- Slice and serve immediately
Notes
- For extra crispiness, carefully flip the crust and bake 5 additional minutes.
- Let the crust cool slightly before topping to prevent wilting the lettuce.
- Store crust and salad separately for best leftovers.
