For the Chicken Crust:

  • 1 lb ground chicken
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 tsp dried Italian herbs (oregano, basil)

  • Salt and pepper, to taste
  • 1 tbsp olive oil (for greasing if needed)

For the Caesar Salad Topping:

  • 2 cups romaine lettuce, chopped
  • 1/4 cup Caesar dressing (creamy)
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup cooked chicken pieces, seasoned and crisped or chicken bacon bits (optional)
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix the crust. In a large bowl, combine ground chicken, mozzarella, Parmesan, egg, Italian herbs, garlic powder, salt, and pepper. Mix until fully combined.
  3. Shape the crust. Press the mixture onto the prepared baking sheet into a 10–12-inch round crust, keeping thickness even.
  4. Bake. Bake for 20–25 minutes, or until golden brown and fully cooked through. If excess moisture appears, gently blot with a paper towel near the end of baking.
  5. Prepare the salad. In a separate bowl, toss chopped romaine with Caesar dressing and grated Parmesan.
  6. Cool slightly. Remove crust from oven and let rest for 5–10 minutes to firm up.
  7. Assemble. Top crust evenly with Caesar salad mixture.
  8. Finish. Add optional crispy chicken pieces or chicken bacon bits. Sprinkle with black pepper and additional Parmesan if desired.
  9. Slice and serve immediately

Notes

  • For extra crispiness, carefully flip the crust and bake 5 additional minutes.
  • Let the crust cool slightly before topping to prevent wilting the lettuce.
