Description

Juicy bone-in chicken is coated in a rich blend of French dressing, apricot preserves, and onion soup mix, then baked until caramelized and perfectly tender.   • 2 to pounds bone-in chicken pieces (thighs and drumsticks, skin-on)
  • 1 cup creamy French dressing
  • 1 cup apricot preserves (or apricot jam)
  • 1 (1-ounce) packet dry onion soup mix

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Pat the chicken pieces dry with paper towels and arrange them skin-side up in a single layer.
  3. In a medium bowl, whisk together the French dressing, apricot preserves, and dry onion soup mix until smooth.
  4. Pour the sauce evenly over the chicken, lifting the pieces slightly so some sauce flows underneath.
  5. Bake uncovered for 25 minutes.
  6. Spoon some of the pan sauce over the chicken to baste it.
  7. Continue baking for 20–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  8. For crispier skin, broil for 2–3 minutes, watching carefully to prevent burning.
  9. Let the chicken rest for 5–10 minutes before serving. Spoon the extra sauce over each piece and enjoy.

Notes

  • Pat the chicken dry before baking for better browning.
  • Catalina dressing can be substituted for French dressing.
  • Apricot jam works just as well as preserves.
  • Store leftovers in the refrigerator for up to 4 days.
  • Delicious served with mashed potatoes, rice, egg noodles, or a fresh green salad.
  • Broiling at the end is optional but gives the chicken a beautiful caramelized finish.
