- 2 to 2½ pounds bone-in chicken pieces (thighs and drumsticks, skin-on)
- 1 cup creamy French dressing
- 1 cup apricot preserves (or apricot jam)
- 1 (1-ounce) packet dry onion soup mix
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Pat the chicken pieces dry with paper towels and arrange them skin-side up in a single layer.
- In a medium bowl, whisk together the French dressing, apricot preserves, and dry onion soup mix until smooth.
- Pour the sauce evenly over the chicken, lifting the pieces slightly so some sauce flows underneath.
- Bake uncovered for 25 minutes.
- Spoon some of the pan sauce over the chicken to baste it.
- Continue baking for 20–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- For crispier skin, broil for 2–3 minutes, watching carefully to prevent burning.
- Let the chicken rest for 5–10 minutes before serving. Spoon the extra sauce over each piece and enjoy.
Notes
- Pat the chicken dry before baking for better browning.
- Catalina dressing can be substituted for French dressing.
- Apricot jam works just as well as preserves.
- Store leftovers in the refrigerator for up to 4 days.
