Packed with seasoned ground beef, roasted veggies, and a creamy, sweet-savory caramelized onion aioli, this easy bowl recipe is hearty, comforting, and irresistibly delicious. Perfect for busy weeknights or family dinners.

Ingredients

Scale

For the Burger Meat

  • pounds ground beef (80/20 blend)

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon smoked paprika

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 2 tablespoons olive oil

For the Caramelized Onion Aioli

  • 2 large yellow onions, thinly sliced

  • 2 tablespoons butter

  • 1 tablespoon brown sugar

  • ½ cup mayonnaise

  • 2 tablespoons sour cream

  • 1 garlic clove, minced

  • 1 tablespoon fresh lemon juice

  • ½ teaspoon salt (to taste)

  • ¼ teaspoon black pepper

For the Bowl Assembly

  • 6 cups mixed greens or chopped romaine lettuce

  • 2 large tomatoes, diced (or 2 cups cherry tomatoes, halved)

  • 1 large cucumber, diced

  • ½ large red onion, thinly sliced

  • 1 cup shredded cheddar cheese

  • ½ cup dill pickle slices

  • ¼ cup fresh chives, chopped

Instructions

  1. Caramelize the onions: Heat butter in a skillet over medium-low heat. Add sliced onions and brown sugar, stirring to coat. Cook slowly for 25–30 minutes, stirring occasionally, until deep golden and jammy.

  2. Prepare the beef: In a large bowl, mix ground beef, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Combine gently with your hands—don’t overmix.

  3. Make the aioli: Let the onions cool slightly. In a bowl, mix mayonnaise, sour cream, minced garlic, lemon juice, salt, and pepper. Stir in the caramelized onions. Taste and adjust seasoning.

  4. Cook the beef: Heat olive oil in a skillet over medium-high heat. Add the seasoned beef and cook for 8–10 minutes, breaking it apart with a spoon until browned and fully cooked.

  5. Prep veggies: Wash and chop lettuce, tomatoes, cucumber, and red onion. Shred cheese if not pre-grated.

  6. Assemble: Start each bowl with greens, top with cooked beef, and arrange tomatoes, cucumbers, onions, and pickles.

  7. Finish & serve: Add a generous dollop of caramelized onion aioli, sprinkle cheddar and chives, and serve immediately.

Notes

  • You can make the caramelized onion aioli up to 3 days ahead and store it in the fridge.
Swap beef for ground turkey or chicken for a lighter version.
Great for meal prep — just keep the aioli separate until serving.
