Description

These Buffalo Chicken Burgers are juicy, spicy, and loaded with bold buffalo flavor in every bite. Made with ground chicken, ranch, hot sauce, crispy bacon, and melted blue cheese, they’re an easy weeknight dinner or game day favorite that’s ready in about an hour.

  • 1 pound ground chicken
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 2 tablespoons ranch dressing
  • 2 tablespoons hot sauce
  • ⅓ cup diced scallions
  • ½ cup + 2 tablespoons breadcrumbs
  • 1 large egg
  • 1 tablespoon olive oil
  • 4 potato buns
  • 4 strips bacon, cooked crispy
  • Crumbled blue cheese
  • Iceberg lettuce
  • Extra buffalo sauce, for serving
  • Ranch dressing, optional

Instructions

  1. In a large bowl, combine the ground chicken, garlic powder, onion powder, ranch dressing, hot sauce, scallions, breadcrumbs, and egg. Mix until well combined. Cover and refrigerate for 30 minutes.
  2. While the chicken mixture chills, cook the bacon in a skillet over medium to medium-high heat until crispy. Transfer to a paper towel-lined plate.
  3. Divide the chilled chicken mixture into 4 equal portions and shape into burger patties.
  4. Heat the olive oil in a large skillet over medium heat. Place the patties in the pan and gently press an indentation into the center of each burger to help them cook evenly.
  5. Cook for 5 minutes on the first side. Flip and cook for another 6 minutes, or until the internal temperature reaches 165°F (74°C).
  6. During the last 2 minutes of cooking, top each burger with crumbled blue cheese and cover the skillet to allow the cheese to soften.
  7. Toast the potato buns if desired.
  8. Assemble each burger by placing the chicken patty on the bottom bun. Drizzle with buffalo sauce, add crispy bacon and iceberg lettuce, then top with the remaining bun. Serve immediately.
