- 2 tablespoons fresh basil leaves, chopped
- 1 tablespoon extra virgin olive oil
- 1 teaspoon balsamic vinegar
- 1 clove garlic, minced or pressed
- ¼ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
For Serving
- Balsamic reduction, for drizzling
- Crackers or crostini
- Optional: crushed red pepper flakes
Instructions
- Soften the Boursin:
Let the Boursin sit at room temperature for 15–20 minutes until slightly softened. - Prepare the bruschetta topping:
In a small bowl, combine chopped tomatoes, basil, olive oil, balsamic vinegar, garlic, salt, and pepper. Stir gently and let sit for 5 minutes to allow flavors to blend. - Spread the base:
Spread the softened Boursin evenly into an 8–9 inch shallow serving dish. - Add topping:
Spoon the tomato mixture over the Boursin, leaving excess liquid behind to prevent the dip from becoming watery. - Finish and serve:
Drizzle with balsamic reduction and garnish with extra basil or red pepper flakes if desired. Serve immediately with crackers or crostini.
Notes
- De-seeding the tomatoes prevents excess moisture.
- For best flavor, use ripe, in-season tomatoes.
