Peach Layer & Caramel

  • 45 peaches, thinly sliced (peel on)
  • ½ teaspoon cinnamon, divided
  • ½ cup sugar
  • ¼ cup water
  • 1 tablespoon bourbon

Cake Batter

  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons bourbon
  • 1 cup all-purpose flour
  • ½ cup almond flour
  • 1 teaspoon baking powder
  • ¼ teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F.
  2. Line a 9-inch cake pan (not springform) with parchment paper and butter the parchment.
  3. Arrange peach slices in a circular pattern over the parchment. Sprinkle with ¼ teaspoon cinnamon.
  4. In a saucepan, combine ½ cup sugar and ¼ cup water. Heat over medium-high without stirring until light brown (10–15 minutes). Remove from heat, add 1 tablespoon bourbon, and pour over peaches.
  5. Beat butter and ¾ cup sugar until light and fluffy (about 3 minutes).
  6. Add eggs one at a time. Mix in vanilla and 2 tablespoons bourbon.
  7. In a separate bowl, whisk flours, baking powder, and remaining cinnamon. Gradually mix into batter.
  8. Pour batter over peaches and smooth the top.
  9. Bake 30–35 minutes or until a toothpick comes out clean.
  10. Cool 15–30 minutes before inverting onto a serving plate.

Notes

  • Do not stir the caramel while cooking to prevent crystallization.
  • Use ripe but firm peaches for best texture.
  • Cool slightly before flipping to keep the topping intact.
  • Serve warm with vanilla ice cream or whipped cream for extra indulgence.
