Description

  • 5 ounces fresh spinach (or spinach and arugula blend)
  • 8 ounces mandarin orange slices in 100% juice, drained (two 4-ounce containers)
  • ¾ cup fresh blueberries
  • 3 ounces goat cheese, crumbled
  • ¼ cup shelled pistachios

Honey Citrus Dressing

 

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons honey
  • 1 tablespoon orange juice
  • Salt and black pepper, to taste

Instructions

  1. Rinse the spinach (or spinach-arugula blend) and pat dry with paper towels. Transfer to a large salad bowl.
  2. Add the drained mandarin oranges, blueberries, crumbled goat cheese, and pistachios.
  3. In a small bowl, whisk together the olive oil, honey, and orange juice until well combined.
  4. Pour the dressing over the salad and gently toss to coat.
  5. Season with salt and pepper to taste. Serve immediately and enjoy.
