1 pound fresh shrimp, peeled and deveined

6 ounces fettuccini pasta

3 cups fresh mushrooms, sliced

⅔ cup chicken broth

½ cup sour cream

1 tablespoon cornstarch

1 cup chicken broth (additional)

1 (7-ounce) jar roasted red bell peppers, drained and chopped

Instructions

Season the Shrimp: Toss peeled shrimp with olive oil and Cajun seasoning. Set aside to marinate while preparing the other ingredients.

Cook the Pasta: Boil fettuccini in salted water until al dente, 8–10 minutes. Drain and set aside.

Sauté Vegetables: Melt butter in a large skillet over medium heat. Add mushrooms and shallots; cook until tender. Remove and set aside.

Cook the Shrimp: In the same skillet, cook shrimp 2–3 minutes until pink. Remove and set aside.

Make the Sauce: Add ⅔ cup chicken broth to the skillet; bring to a boil and reduce to ¼ cup. Whisk sour cream, cornstarch, and remaining broth in a bowl. Pour into the skillet, stirring until thick and creamy.

Combine: Add shrimp, mushrooms, roasted red peppers, and capers to the sauce. Stir until heated through.

Serve: Spoon over fettuccini and garnish with parsley or Parmesan. Serve warm!
