Description

This Blackened Shrimp Stroganoff is a creamy, Cajun-inspired twist on a comfort classic! Juicy, seasoned shrimp mingle with mushrooms, roasted red peppers, and fettuccine in a rich, tangy sauce. It’s quick enough for weeknights yet elegant enough for entertaining — pure flavor magic in under 30 minutes.


Ingredients

  • 1 pound fresh shrimp, peeled and deveined

  • 1 tablespoon olive oil

  • 1 tablespoon Cajun seasoning

  • 6 ounces fettuccini pasta

  • 1 tablespoon butter

  • 3 cups fresh mushrooms, sliced

  • 1 tablespoon chopped shallots

  • ⅔ cup chicken broth

  • ½ cup sour cream

  • 1 tablespoon cornstarch

  • 1 cup chicken broth (additional)

  • 1 (7-ounce) jar roasted red bell peppers, drained and chopped

  • 1 tablespoon drained capers

  • Salt and pepper to taste

  • Optional garnish: chopped parsley or Parmesan cheese


Instructions

  1. Season the Shrimp: Toss peeled shrimp with olive oil and Cajun seasoning. Set aside to marinate while preparing the other ingredients.

  2. Cook the Pasta: Boil fettuccini in salted water until al dente, 8–10 minutes. Drain and set aside.

  3. Sauté Vegetables: Melt butter in a large skillet over medium heat. Add mushrooms and shallots; cook until tender. Remove and set aside.

  4. Cook the Shrimp: In the same skillet, cook shrimp 2–3 minutes until pink. Remove and set aside.

  5. Make the Sauce: Add ⅔ cup chicken broth to the skillet; bring to a boil and reduce to ¼ cup. Whisk sour cream, cornstarch, and remaining broth in a bowl. Pour into the skillet, stirring until thick and creamy.

  6. Combine: Add shrimp, mushrooms, roasted red peppers, and capers to the sauce. Stir until heated through.

  7. Serve: Spoon over fettuccini and garnish with parsley or Parmesan. Serve warm!

Notes

  • For extra heat, add a pinch of cayenne or extra Cajun seasoning.
    Substitute Greek yogurt for sour cream to lighten it up.
    Leftovers? Store in an airtight container up to 2 days; reheat with a splash of broth to loosen the sauce.
