  • 1 (15-ounce) can corn, drained and rinsed (or 2 cups fresh corn kernels)
  • 1/3 cup red onion, chopped
  • 1 red bell pepper, chopped
  • 3 tablespoons scallions, chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1/4 cup olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the black beans, corn, red onion, red bell pepper, scallions, and cilantro.
  2. In a separate medium bowl, whisk together the lime juice, olive oil, oregano, smoked paprika, salt, and pepper until well combined.
  3. Pour the dressing over the bean mixture and toss until evenly coated.
  4. Taste and adjust seasoning with additional salt and pepper if needed.
  5. Cover and refrigerate for at least 1 hour to allow the flavors to blend.
  6. Serve chilled with tortilla chips or as a topping for tacos, burrito bowls, grilled chicken, or fish.
