- Juice of 2 limes
- 1/4 cup olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the black beans, corn, red onion, red bell pepper, scallions, and cilantro.
- In a separate medium bowl, whisk together the lime juice, olive oil, oregano, smoked paprika, salt, and pepper until well combined.
- Pour the dressing over the bean mixture and toss until evenly coated.
- Taste and adjust seasoning with additional salt and pepper if needed.
- Cover and refrigerate for at least 1 hour to allow the flavors to blend.
- Serve chilled with tortilla chips or as a topping for tacos, burrito bowls, grilled chicken, or fish.
