Description

  • 4 ounces block feta cheese, cut into small cubes
  • 3 medium Roma tomatoes, seeded and diced

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon apple cider vinegar (or white vinegar)

Instructions

  1. Choose ripe avocados that are slightly firm so they’ll hold their shape after mixing.
  2. Cut the feta cheese into small cubes.
  3. Dice the avocados and tomatoes, then finely chop the red onion, garlic, and parsley or cilantro.
  4. Add the avocado, feta, tomatoes, onion, garlic, herbs, olive oil, vinegar, and salt to a medium mixing bowl.
  5. Gently fold everything together with a large spoon until evenly combined. Avoid overmixing to keep the avocado chunky.
  6. Transfer to a serving bowl and serve immediately with crackers, tortilla chips, pita chips, flatbread, or fresh vegetables.
