Description

This Artichoke Tomato Salad is a bright, fresh Tuscan-inspired dish made with marinated artichoke hearts, juicy cherry tomatoes, chickpeas, red onion, and herbs tossed in a simple red wine vinaigrette. It’s quick, no-cook, and perfect for lunch, meal prep, or an easy side dish.

  • 10 ounces cherry tomatoes, halved
  • ½ medium red onion, thinly sliced
  • 1 (12-ounce) jar marinated artichoke hearts, drained
  • 1 (15-ounce) can chickpeas, drained, rinsed, and dried (about 1½ cups)
  • 2 tablespoons fresh basil, sliced into thin strips
  • 2 tablespoons fresh chives, finely chopped
  • 1 tablespoon capers

Tuscan Vinaigrette

 

  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried parsley
  • ¼½ teaspoon salt (to taste)
  • ½ teaspoon garlic powder or 1 fresh garlic clove, minced
  • ¼ teaspoon ground black pepper

Instructions

  1. Prep the ingredients.
    Halve the cherry tomatoes, thinly slice the red onion, chop the chives, and slice the basil. Drain the artichoke hearts and cut into bite-sized pieces if needed. Rinse and dry the chickpeas.
  2. Make the vinaigrette.
    In a small bowl, whisk together olive oil, red wine vinegar, dried parsley, salt, garlic powder (or fresh garlic), and black pepper until combined.
  3. Assemble the salad.
    In a large bowl, combine tomatoes, red onion, artichokes, chickpeas, basil, chives, and capers.
  4. Dress and toss.
    Pour the vinaigrette over the salad and toss gently until evenly coated.
  5. Chill or serve.
    Serve immediately or refrigerate for 1–2 hours for deeper flavor.
