Description
This Witch’s Cauldron Beef Stew is hearty, cozy, and family-friendly. Tender beef, carrots, and potatoes simmer in a rich broth and can be served in rustic bread bowls for a magical touch. Perfect for chilly nights or festive fall dinners.
Ingredients
1 lb beef stew meat
2 cups beef broth
3 carrots, sliced
2 potatoes, cubed
1 onion, chopped
2 cloves garlic, minced
2 tbsp tomato paste
1 tsp dried thyme
1 bay leaf
Salt and pepper to taste
Hollowed-out bread bowls for serving (optional)
Instructions
Heat a little oil in a large pot over medium heat. Add beef and brown on all sides.
Stir in onion and garlic, cooking until softened and fragrant (about 2 minutes).
Mix in tomato paste, thyme, bay leaf, salt, and pepper. Cook for 1 minute.
Pour in beef broth, scraping up browned bits from the bottom of the pot.
Add carrots and potatoes. Bring to a boil, then reduce heat to low. Cover and simmer for 60–90 minutes, until beef is tender and vegetables are cooked through.
Remove bay leaf. Adjust seasoning to taste.
Ladle stew into bread bowls if desired and serve warm.

The stew tastes even better the next day as flavors deepen.
Can be made in a slow cooker—brown beef first, then cook on low 7–8 hours.
