Description

Witches Brew Stew is a hearty, flavorful fall dish filled with ground beef, hot sausage, and a blend of savory vegetables. This easy slow-cooker recipe is perfect for cozy evenings, Halloween parties, or any time you’re craving comfort food with a spooky twist.


Ingredients

  • 1 lb hot sausage (Jimmy Dean or mild if preferred)

  • 1 lb ground beef

  • 2 large carrots, sliced

  • 4 medium potatoes (gold or red), diced

  • 1 cup mushrooms, sliced

  • 2 stalks celery, chopped

  • 2 leeks, chopped

  • 4 cloves garlic, minced

  • 1 tbsp Italian herb seasoning

  • 4 cups beef broth

  • 1 can Campbell’s Tomato Soup

  • 1 can Campbell’s French Onion Soup


Instructions

  1. In a large skillet over medium-high heat, cook the ground beef and hot sausage together. Crumble the meat as it cooks, then drain off any excess fat.

  2. Add the cooked beef and sausage mixture to your slow cooker.

  3. For the carrot pumpkins: Cut two straight slits at the top of each carrot, then remove two triangles to form a pumpkin shape. Slice the carrots into rounds.

  4. Add the sliced carrots, diced potatoes, celery, leeks, and minced garlic to the slow cooker.

  5. Pour the tomato soup and French onion soup into the slow cooker (don’t add the mushrooms yet).

  6. Add the beef broth and sprinkle the Italian herb seasoning over the mixture. Stir everything together.

  7. Cook on HIGH for 4 hours.

  8. While the stew cooks, prepare the skull mushrooms: Use a straw to carve out eye holes and a nose, and make slits on the mushroom stems for a collar effect.

  9. Add the carved mushrooms to the stew in the last 10 minutes of cooking, allowing them to cook until tender but still holding their shape.

Notes

You can substitute the hot sausage with mild sausage or Italian sausage if you prefer a less spicy flavor.
If you prefer a thicker stew, you can mash a portion of the potatoes before serving to create a heartier consistency.
