Ingredients

  • 810 chicken thighs and/or drumsticks (bone-in, skin-on)

  • 2 tablespoons extra-virgin olive oil or canola oil

  • 2 cups of your favorite BBQ sauce

  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F.

  2. Coat chicken on all sides with olive oil and season with salt and pepper.

  3. Place chicken skin-side down on a rimmed baking sheet. Bake for 25 minutes.

  4. Increase oven temperature to 425°F.

  5. Baste chicken with BBQ sauce on the top, flip carefully, baste other side, and bake for 7 minutes.

  6. Repeat basting and baking two more times (7 minutes each), for a total of 21 minutes additional baking.

  7. Check internal temperature—it should be at least 165°F (ideal: 180–190°F for dark meat).

  8. For crispier skin, broil for 3–5 minutes until nicely browned.
